In the roaster’s words
Big blueberry notes from this Red Bourbon produced by renowned Colombian producer Luz Angela Rojas on her farm Chorro Alto in the Huila region at 1600-1850masl. This lot undergoes an two stage, anoxic fermentation process where 90% ripe cherries are floated in water to sort green/underripe/dry cherries before undergoing two stages of fermentation, the latter a 40 hour anoxic fermentation in a temp controlled environment. The final cup is bursting with blueberry sweetness and aromatic dried fruits that remind us of a blueberry pie and tastes great as both an espresso or filter.
