Mori Farm is a Fine Robusta pioneer benefiting from fertile basalt soil at 900m. Specializing in Robusta Sẻ and TR4 varieties, the farm elevates quality through its innovative Natural process, cofermented with Herbal. A bold and experimental lot that incorporates local herbs and essential oils, bringing an aromatic, cooling sensation and savory complexity. This meticulous method begins with a 5-day dry fermentation, followed by co-fermenting cherries with herbal leaves and essential oils. After a precision drying phase, the beans are frozen for one month to stabilize complex aromatic compounds before a final slow-dry. This cutting-edge approach yields a clean, balanced cup with unmatched sweetness, positioning Mori Farm at the forefront of the global modern Robusta movement.
