Lot data: Harvest 07 Mar 2025 • Moon phase: Waxing (Sagittarius) • Wet mill: 07 Mar 2025 • 24h anaerobic fermentation (beer yeasts) • Drying: 08–20 Mar 2025 (12 days, dark-room) • Rest: 4 months (sealed) This 92.5-point Geisha Washed Lot 2 is floral, high-definition, and extremely clean. This batch was harvested on the waxing moon in Sagittarius; its fermentation was carried out with beer yeasts in an anaerobic system for 24 hours. After the fermentation time it entered a dark drying room for 12 days. It was stored in sealed bags and left to rest for 4 months. Expect orange blossom, rose, and raspberry on the nose, then orange and tangerine over soft honey in the cup. The texture stays silky and beautifully clean, growing smoother as it cools.
