Tasting notes
In the roaster’s words
This lot comes from Faustino Flores in El Diamante, Cajamarca, part of a multi-generational coffee family behind Finca El Morito. While the farm is known for traditional varieties, recent years have focused on newer plantings like Marshell, combining family experience with a more experimental approach to cultivation. Marshell is a rare Catimor-derived varietal, selected for both cup quality and resilience. Cherries are selectively harvested, fermented anaerobically for 72 hours, then dried slowly over 30 days in solar dryers. The extended drying is designed to build complexity while maintaining flavour in the cup. What makes Marshell worth watching is that it isn’t just resilient. It can also produce a genuinely high-scoring, expressive coffee. - Joe Bradshaw, Coffee Trainer
