Expect juicy, jammy stone-fruit flavours, floral and chocolate notes, and a creamy body. Cherries are dried in thick layers inside semi-permeable enclosures, slowing the process and increasing fermentation. Compared to traditional sun-dried naturals, this method produces a sweeter, more complex, and fruit-forward cup.
