What we're tasting: Tropical, Citrus Fruit, Toffee Origin: Peru, Cajamarca Producers: San Ignacio Cooprative Altitude: 1500-1800 Process: Washed Varietal: Caturra, Catuai, Bourbon What about the coffee? Bright, sweet, and full of character—this washed-processed coffee from the highlands of northern Peru is everything we love in a cup. San Ignacio, in northern Cajamarca on the Ecuadorian border, is a highland province of smallholder farms where coffee is a mainstay alongside mixed agriculture. Ridges, humid valleys and regular rainfall make for slow, even ripening and the kind of clean, sweet cups the area is known for. Expect a juicy hit of tropical fruit up front, with a raisin like sweetness, and a touch of hazelnut. It’s the kind of coffee that brings you in with bold flavour but keeps you coming back with a soft, full-bodied structure and a clean, crisp finish. About the Name Look, it's a pun. It's just a pun.
