Origin: Hulia, Colombia Farm: Finca Las Flores Processing: Thermal Shock Washed Varietal: Red Bourbon Altitude: 1750m Tasting Notes: Starwberry, Hibiscus, Goji Berry, Natural Wine - About this coffee : This Red Bourbon showcases the innovation of modern Colombian processing. Through a carefully controlled thermal shock fermentation, the coffee undergoes a precise sequence of fermentation (24 submerged fermentation then 24 hours of oxidation in cherry) and temperature manipulation, enhancing its aromatic complexity while preserving exceptional clarity. The result is a vibrant cup with expressive red fruit, layered florals, and a refined sweetness. About Finca Las Flores: Finca Las Flores is a family-owned farm with more than 30 years of history, founded by Edilberto Vergara and Nubia Ayure. After Nubia’s passing in 2012, their sons Johan and Diego took over the farm and introduced innovative approaches to fermentation, drying, and exotic varietal cultivation. Today, the farm is recognized as a benchmark for excellence in southern Huila. It produces some of Colombia’s most remarkable varieties, including Java, Tabi, Red Bourbon, Maracaturra, Pink Bourbon, Gesha, and Caturra Chiroso. Johan leads experimentation in fermentation and processing, while Diego oversees production management, drying, and quality control—together ensuring consistent, high-quality coffees that reflect the unique potential of Las Flores.
