Tastes like: Watermelon, Candy Sweetness, Clean This exceptional Castillo lot comes to us from acclaimed Colombian producer Jairo Arcila. The coffee undergoes a 48-hour anaerobic fermentation, with fresh watermelon added to the tanks to enhance its vibrant fruit character. After fermentation, it is fully washed and carefully dried over 10 days. The result is a beautifully balanced cup with bright, candy-like watermelon sweetness that remains elegant and refined, avoiding the overpowering intensity or ‘funk’ often associated with co-fermented coffees. What impressed us most is how clean and seamlessly integrated the fruit character is. Rather than dominating the profile, the watermelon complements the coffee's natural sweetness, creating a cup that's crisp, refreshing, and remarkably easy to enjoy.
