Country of Origin: Lerida Variety: Pacamara Process: Natural OX Finca Lérida is one of Panama’s most historic coffee estates, with a legacy dating back to 1929. Located in Boquete, Chiriquí, the estate produces exceptional specialty coffees across a range of varieties, with this Pacamara Natural from Michela Estate being our first varietal release from this year’s harvest. The finest cherries were selected through flotation before undergoing three days of controlled fermentation in stainless steel tanks. During this fermentation, an oxygen injection pump was used to accelerate the process in a clean and controlled manner. Then followed by 22 days of drying on African beds to develop sweetness, complexity and intensity. In the cup we find notes of c lementine, nectarine and amaretto.
