Country of Origin: Panama Variety: Ethiopia Process: Natural Kotowa is a producer we're always excited to see. Ricardo Koyner is a third generation producer, and current President of the Panamanian Specialty Coffee Association and his daughter Victoria has helped us bring our Panamanian chocolate project to life. From their nine farms, we've tried some incredible coffees over the years, and this year we've been able to secure multiple lots for our menu, including this, an Ethiopian wild varietal grown at their Duncan estate. It has undergone a natural process which results in a vibrant, sweet and citric-forward coffee. In the cup we find notes of panela, mango and pineapple.
