Origin: Mbala, Zambia Farm: Mount Sunzu Processing: Washed Varietal: Starmaya Peaberry Altitude: 1600 masl Flavour Notes: Honey Lemon, Hazelnut, Dates, Darjeeling Tea Suitable for: Espresso based or filter. - About the rish creature : For this release, we have created a new creature in our coffee world. This coffee was sourced for our partner, Narrative Coffee in Wales, as their featured espresso for July. The dragon takes inspiration from the iconic Welsh flag, celebrating the spirit and heritage of Wales. The main colour palette follows the bold red tones of the Welsh Dragon, bringing together a sense of place, partnership, and the character of this unique coffee. (Also featuring a swan flat white that Sam, the founder of Narrative Coffee, had made us last time when we visited!) - About the coffee : This coffee was processed on-site at Mount Sunzu’s own wet and dry mill. After selective picking, ripe cherries were floated, before being pulped and dry fermented for 24 hours (’dry’ meaning not submerged in water). Fermentation took place in 1000ml tanks with naturally occurring yeast and bacteria. After fermentation, the coffee was spread out on raised drying beds which got covered during the night, taking 10 days total to dry. Following this, the coffee was hulled, graded, and hand sorted in Mount Sunzu’s dry processing facilities. - About Mount Sunzu: Mount Sunzu Coffee is a specialty coffee farm and producer operating in northern Zambia, near the country's highest mountain, Mount Sunzu. Founded in 2018, the company is dedicated to revolutionising coffee production through sustainable farming practices, cutting-edge technology, and a strong commitment to social and environmental responsibility. Mount Sunzu aims to set a new standard for modern agriculture by combining high-quality coffee production with positive community impact and climate-smart practices. Sustainability for Mount Sunzu refers to coffee production that is considerate of both the environment it grows in, and the people that depend on it as a livelihood. For example: Not only has Mount Sunzu created 300 jobs in the local region, they also provide pension funds and health insurance for employees and their families, benefits which give workers more long term security. To reduce CO2 emissions, Mount Sunzu has installed solar panels with a 92 kW energy capacity. 600 of Mount Sunzu’s 780 hectare plot of land is reserved to protect the native Miombo forest and Dambo wetlands.

Starmaya Peaberry; cherries were floated, pulped, dry fermented for 24 hours, dried on raised beds for 10 days, then hulled, graded and hand sorted.
