Country of Origin: Panama Variety: Geisha Process: Anaerobic Washed Altitude: 1700-1900 mASL Flying Pumas is an internationally acclaimed farm in the Volcan region of Chiriqui, Panama, in close proximity to the La Amistad Park. Here they promote biodiversity and conservation on two thirds of the farm, whilst the other one third is dedicated to growing a range of different varietals, with Geisha being the most prominent. This coffee is from their Ocelot lot. As a part of their Summit Reserve range, it has undergone an anaerobic washed process. Once the cherry is picked at its ripest it is then anaerobically fermented in two stages, one in cherry, the other in mucilage. Then undergoing a more traditional washed process to finish. The effect is an enhanced profile that is shown in the fruit notes of this coffee, whilst retaining the characteristic subtlety of the variety. In the cup, we found flavour notes of pink grapefruit, redcurrant and jasmine.
