Country of Origin: Ethiopia Variety: JARC 74158 Process: 72h Natural Anaerobic Altitude: 2,200mASL It is a first for us to have coffee from Elto on our menu. It is exciting to be able to showcase their coffees as they are doing exceptional work, resulting in incredible, and unique, flavour profiles. This lot, after picking, has undergone a 72h sealed tank fermentation before being dried on raised beds. This process contributes to its fruit-forward, but floral flavour profile, which reflects both process and varietal. In the cup, we found flavour notes of chamomile, nectarine and cacao.
