Good flat white coffee beans have to do two jobs: taste sweet as espresso and keep their shape once milk is added. The safest buys are espresso-friendly coffees with body, sensible roast development and notes around chocolate, caramel, biscuit or nuts. Espresso-roasted beans are normally easier to dial in, more soluble and made with pressure brewing in mind. Omni roasts can be excellent too, but look for a clear roaster recommendation rather than guessing from the tasting notes alone.
Even excellent beans will taste hollow if they are stale or ground badly. Buy fresh, let espresso beans rest for a few days after roasting where possible, and adjust the grind until the shot tastes sweet rather than sour or bitter.

Blends are often designed for consistency and milk, but plenty of single origins work beautifully. Prioritise espresso suitability, sweetness and body over the blend label itself.
Chocolate, caramel, hazelnut, almond, brown sugar and biscuit notes are reliable. Fruitier beans can work, but they need enough sweetness and body to avoid tasting sharp through milk.
