In the roaster’s words
Back for a third consecutive year, this latest crop from Alex Ponce continues to showcase his dedication to producing exceptional coffee - The coffee Origin: Marcala, La Paz, Honduras Producer: Alex Ponce Varietal: Pacas, Lempira Process: Natural Altitude: 1600 masl - The producer At 19, Alex began working in a clothing factory, where he spent nine years saving. In 2013, his uncle offered to sell him a property in his family’s hometown, Cabañas, La Paz. Alex used his savings to purchase the land, left the factory the following year, and began planting his coffee farm. Grown at 1,600 meters above sea level, this lot of Pacas and Lempira is naturally processed with care. On the day of picking, ripe cherries are laid on raised beds to dry to the ideal moisture. Alex expanded the drying station this year, adding more raised beds to create extra space for cloudy days or slower sun during harvest. Beans are raked every 30 minutes and hand-sorted to remove any defects, ensuring exceptional quality. Expect a bright, well-balanced cup with notes of green apple, honeydew, and nougat.
