Coffee is picked and delivered to the Kinini washing station, separated from other lots to be processed. Cherries must arrive by 4 pm on the day of picking. As the station has grown, raised beds have also expanded, allowing cherries to be spread two inches deep and dried for 48 days, turned regularly to ensure even drying and avoid over-fermentation. This year’s harvest includes varieties Bourbon, BM139, BM71, and Jackson, offering delightful floral notes, along with medjool date and vanilla flavours with a hint of strawberry coming through.
