UN088 - Finca La Negrita, Bourbon Sidra Natural
In the roaster’s words
Country of Origin: Colombia Variety: Bourbon Sidra Process: Natural Altitude: 1900-2000mASL In the cup we find flavours of mango, dried apricot and fruit toffee. Mauricio’s new harvest is here, and this 6kg Bourbon Sidra is the first lot to land. It is our first release from the Finca La Negritas 2026 harvest in Tolima, Colombia. We have been working with Mauricio since the beginning, and we’re excited by each new harvest he produces. Mauricio’s approach to farming and processing is detail-oriented and scientific. He used to work as an oncologist and has been building a reputation in the coffee competition scene for his intentional, science-based fermentation methods. This lot is processed as a natural with a 24-hour anaerobic fermentation and added nitrogen flushing. Carbon dioxide naturally builds up in the tanks during anaerobic fermentation, and flushing them with nitrogen displaces it. Mauricio finds this results in a coffee with a smooth mouthfeel, intense flavour clarity and a long-lasting sweet aftertaste.
